I decided to make oatmeal cookies today because I've been craving them like crazy! I didn't have any raisins or I would have made the Vanishing Oatmeal Raisin Cookie recipe that's on the lid of the Quaker Oats Quick Oats container. Instead I found this recipe online. We're 10 minutes into the 15 minute baking process and I noticed that one of the cookies is expanding like CRAZY! I think it was the last one out of the bowl, so it might have less oatmeal than the others. I guess I'll just have to eat that one :)
Chewy Chocolate Chip Oatmeal Cookies
1/2 cup butter, softened
1/2 cup packed light brown sugar
1/4 cup white sugar
1 egg
1teaspoons vanilla extract
3/4 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick-cooking oats
1/2 cup semisweet chocolate chips
Preheat the oven to 325° F.
In the bowl of a standing mixer fitted with the paddle attachment, cream together the butter, brown sugar, and white sugar until smooth. Beat in egg then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets. Bake for
